Grandpa is staying over this month. My kids are so thrilled to have dinner with grandpa every evening. Grandpa doesn’t have much bite power so we have to settle for something easy to eat and needs less chewing power.

(serves 4)

olive oil
2 pieces of free-range chicken breast
4 Tbsp oyster sauce
white pepper
1 tsp cornflour

  1. Marinade the chicken breast with oyster sauce overnight in the fridge.
  2. Heat up some olive oil in a non-stick frying pan.
  3. Sear the chicken breasts in the frying pan. Lowering the heat, if necessary.
  4. Take out the chicken with cooking thongs and leave to cool on a plate.
  5. Add some water mixed with cornflour to thicken the remaining sauce in the frying pan. Place the chicken back into the pan and coat evenly in the sauce. Add some pepper, no salt because oyster sauce is pretty salty.
  6. Slice chicken thinly and serve on a plate lined with blanched vegetables. Drizzle some sauce over the chicken breast.
