Sardine Curry

I love canned sardines in tomato sauce and I always keep a few cans in my larder just for a rainy day. It makes a quick meal anytime any day. My favourite style is to make it into a light curry.


(serves 3)

1 large can of sardines in tomato sauce (4 – 5 sardines)
tomato sauce
chili sauce
1 large red onion (cut into wedges)
5 cloves garlic (smashed and skin removed)
a handful of baby tomatoes
5 sprigs of curry leaves
1 Tbsp cold-pressed coconut oil


  1. Pour sardines from the can straight into a saucepan. Using a butter knife, separate each sardine into 2.
  2. Add garlic, tomatoes, curry leaves, tomato sauce and chili sauce. Let them simmer on low heat for 5 minutes, if it starts to splatter add some water then in goes the onion wedges.
  3. Lastly, before it hits the table, stir in the coconut oil.
  4. Best served with steamed Basmathi rice and some garden herbs.
