Lightly caramelized mushrooms and onions

Breakfast, the most important meal of the day.

Ingredients (serves 2)

ciabatta bread (sliced)

250gm swiss button mushrooms (sliced)
1 large yellow onion (halved, sliced)
6 cherry tomatoes (halved)
1 Tbsp butter
1 Tbsp olive oil
a drizzle of balsamic vinegar
sea salt and pepper

Method

  1. Melt some butter on a frying pan, drizzle in some olive oil. Oil mixed in butter will slow down the butter’s burning process.
  2. Saute the sliced onions followed by mushrooms until they caramelize lightly, then add in the baby tomatoes.
  3. Stir evenly and drizzle in some balsamic vinegar, flavour with sea salt and pepper.
  4. Butter a few slices of ciabatta bread and scoop the mushrooms over the bread. Serve warm.
